Hacker keyboards including DIY keyboards and keyboards for Unix workstations.

In this case, the word "hacker" means a computer enthusiast who likes to tinker, modify or just play around with things. Computer hackers tend to use Unix or Unix-like operating systems such as Linux.

Etymology

The word "hacker" meaning tinkerer comes from a person who uses a hacksaw - the hacksaw being a useful tool for modifications of physical objects. This meaning has been jargon at Massachusetts Institute of Technology (MIT) since at least the 1950's. The word was popularized in computing when creative people in MIT's computer labs were being referred to as "hackers". Negative connotations did not occur until the 1980's when a subset of hackers were being used to erroneously represent them all.
