Designing a custom plate, what screw size, hole, spacers should i use?

You are not giving much information about what you want. Most posts with only the text "help" on forums are usually deleted, or at least left alone. I assume you are using Cherry MX.
For a custom plate and case, I have used M3 bolts with 8 mm high spacers between plate and case bottom.
Poker-compatible 60% cases have standoffs with holes tapped for M2 bolts. The PCB is supposed to be bolted to these standoffs with M2 bolts... but I don't know the length. Not all plates I have seen have been bolted themselves - only been held by the switches to stabilise them for better feel. The plate surface should be 5 mm above the PCB, so with a 1.5 mm thick plate the spacer should be 3.5 mm high.
