This is a brave first move, I like it! The plate determines the layout, so you'll need keycaps to match it. Do you have any keycaps yet?
The layout to choose is mostly due to personal preference. I chose SYM100 because I think that it's the most elegant looking and most functional since it doesn't waste space with a long spacebar. It was also easy for me to get keycaps for, since it only has 1U and 1.5U keys.
I'm using a mixture of DSA profile keys, a mixture of ones bought from previous group buys and from 7bit's other thread where he sells random leftovers. DSA key caps are easy because they don't have differing row profiles, so you can put any key in any row without it looking strange.
USA shipping is covered by 7bit, so don't worry about that part.
I realise I probably lost you at some point, so ask more questions wherever you need to.

Ok, I'm in for trying a trackpoint with this keyboard and be willing to chop up some keycaps.
7bit, do I need to change my order or will all plates have trackpoint holes?
Can someone recommend me a trackpoint I can get for this? The only one I could find is an
expired group buy for a Tex (presumably from the Tex Yoda) from Massdrop.

If you definitely want one, you should change your order. If there are enough orders, both versions will be produced.
BTW:

You might find switches useful:

^^^ switches with diodes in them, so you can leave DIODE100 away.

Are the trackpoints from the laptop keyboards long enough? Would I have to extend the stem?

I will let everybody know if the non-hole version will not be available. At 1 order, I guess you will habve to live with the hole in the center.

A plate with a hole is no problem for me.
I am quite new at building my own keyboard and looking forward to the process but there are some aspects that I am not all that familiar with.
How do I change my order from a ANSI400 non hole to a plate with a hole? (what command do I send to the bot for that?)

No I'm just gonna get out my little ryobi and use the small barrel until it's the right size.
